Per aix\u00f2, potser no ens veiem tan sorpresos com podrien estar altres viatgers amb menys cultura del menjar. El propi nom del plat ens ho diu, <em>Khacho = mat\u00f3 \/ Puri = pa<\/em>. Per\u00f2 tant la textura com el sabor s\u00f3n propis del pa\u00eds. A m\u00e9s, hi ha moltes variacions i totes les receptes s\u00f3n bon\u00edssimes. A tall d'exemple, trobem:<\/p>\n<ul>\n<li style=\"text-align: justify;\"><strong>Khachapuri Adjaruli:<\/strong> \u00e9s un dels m\u00e9s famosos i vistosos gr\u00e0cies a la seva forma caracter\u00edstica i a un ingredient estrella extra, l'ou. La massa de pa s'estova amb iogurt i, a l'interior, trobem el farciment de formatge. De forma circular, semblant a una pizza, deu el seu nom al lloc d'on prov\u00e9, la regi\u00f3 d'Imer\u00e8tia.<\/li>\n<\/ul>\n<ul style=\"text-align: justify;\">\n<li><strong>Khabizgina:<\/strong> des de la regi\u00f3 d'Oss\u00e8tia, ens arriba una altra versi\u00f3 del Khachapuri molt semblant a l'Imeruli per\u00f2 amb una variaci\u00f3 pel que fa al farciment. A m\u00e9s del formatge, hi afegeixen un pur\u00e9 de patata bullida. Difereixen de la versi\u00f3 asi\u00e0tica perqu\u00e8 estan farcides, no nom\u00e9s de carn o verdures, sin\u00f3 d'un brou molt sabor\u00f3s que afegeix emoci\u00f3 al paladar. Tenen forma de cap d'alls i la \u00abcua superior\u00bb \u00e9s una aglomeraci\u00f3 de massa dura que serveix per subjectar el Khinkali mentre es menja. Aix\u00ed, el procediment tradicional d'ingesta consisteix a agafar la cua de massa amb la punta dels dits, mossegar una mica la bossa i xuclar el brou pel forat (amb cura de no cremar-nos la boca). Un cop buit de l\u00edquid, ja es pot acabar de menjar a mossegades gaudint del farciment escollit. El seu ingredient principal \u00e9s la carn de vedella i, a m\u00e9s, porta <em>tkemali <\/em>(una salsa georgiana feta de pruna) i nous.
